I heart MKR and Veronica and Shadi!




I never like following the recipes rigorously step by step. It's not because I don't respect the chef who created the dish but it's much more interesting and fulfilling to add your own touch to the dish. Veronica and Shadi were recently featured on Better Homes and Garden and I fell in love with their grilled Mediterranean vegetable and haloumi salad. So I decided to recreate it with ITF own special touch. Another reason for tampering with the recipe is the fact that I didn't have the haloumi cheese, the red onion and the balsamic vinegar.  The dish turned out fine and I am sure Chef Veronica and Shadi would have been proud of my version.

Veronica and Shadi Grill Mediterranean Vegetable Salad
(with ITF's own special touch)
- 2 medium eggplants, sliced lengthways 1cm thick
- Salt flakes
- 2 zucchinis, sliced thinly lengthways
-  1 yellow capsicum halved and sliced
- 1 white onion halved and thickly sliced
- 500 g  Japanese pumpkins, peeled and thinly sliced (or any type of pumpkins)
- 4 cloves garlic sliced.
- 100g cheddar cheese(or any type of your favourite cheese)
- 2 tablespoons caramelised balsamic vinegar (or balsamic vinegar)
- Cracked black pepper



1. Sliced all the vegetables.  Sprinkle salt on the eggplant and let it sit for 15 mins.  Put all the vegetables in a bowl and  marinate it with olive oil. 



2.  Start grilling the vegetables.  1-2 mins per side.

3. Place all the grilled vegetables, the vinegar and the cheddar cheese in an oven proof tray and bake it uncovered for 15 mins at 180 degrees.

4.  Mix the vegetables around so you get the vinegar sauce all over the vegetables.

Serve with bread or any type of meat

  1. yeah, i agree. it's definitely good to be inspired by a recipe and use your own touches to make it your own. (except for baking, since i think it's a bit harder to wing it..)

  2. It's so true, putting your own spin on a recipe is fun but also sometimes necessary depending on the ingredients that you have. And lol at the eggplant! I had one like that a few years ago and I took a photo of it too :)

    I watched that episode of BHAG, and i never watch that crap arse show.

    So when are you going to cook this for me?

  4. Easter Menu is written, printed and finalised.

    You have to wait and see... but I can tell you ribs and lamb chop will be on the menu!

  6. Ribs n lambchops!!! my husbsand will be so happy. I've watched better home and gardens recently too, its like we've grown older and apprecite it now or it's actually gotten better.
